ROASTERS JOURNAL: DARK ROAST.

DARK ROAST : THE FRIEND YOU CAN ALWAYS DEPEND ON.

Fresh dark roast is not your typical dark roast, it has been roasted with finesse and care of the bean. Bringing the rich flavours to the surface, it’s instantly recognizable dark brown beans are what we all picture when we start thinking about coffee. Maybe even what we picture in the making of a crappy diner coffee. But modern dark roasts are turning that bad reputation on its head. Dark roasts are versatile, bold, and delicious with a wide range of flavour notes from spicy to sweet.

INTO THE ROAST

To capture the fullness of a bean for a dark roast the beans are roasted at 430-450°F to achieve that dark rich colour of the beans. As the beans approach the end of second crack, the oils begin to surface and the roast is full bodied and bursting with flavour. Full bodied coffee refers to the weight of the coffee on your palette, the longer it is roasted the fuller that body becomes. When coffee drinkers refer to a cup of coffee as “strong coffee” while they may think they are commenting on flavour or caffeine content, they are typically picking up on that difference you can feel, the body. The boldness of coffee doesn’t necessarily come from the roast, but the ratio of beans to water in brewing.

ALL ABOUT THE BEANS

Many large scale roasters use mixed and lower quality beans for the dark roasts hoping that the casual consumer will not taste the difference. Most coffee consumers think of French or Italian roasts that may be bitter, harsh, and even a little burnt in the cup. Lord & Lady Coffee roasters wanted to go a different route, our dark roast is a certified organic and Fairtrade bean chosen with you in mind. We roast purposefully leaving behind the dated way of roasting, we take the same care of our dark roasts as we do our other more complex roasts, bringing you an excellent cup every time.

BOLD NEW FLAVOUR

Leave that boring dark roast in the past, fresh dark roast is packed with flavour, you may identify these flavours in your next cup:
